But, what makes me even more ecstatic today is because my beloved boss is on leave.. can't help to grin evilly... muahahahaha!! so what's left to be done today? hurm, nothing?? yeah, it's party time, people!! buweks!
We had a breakfast feast just now.. it was a farewell party for one of our practical student.. A hearty breakfast seize the day especially when the boss is not around.. teheee!! and last night, i made nigella's choc chip muffins to be served today at the party.. i like the nigella's because it's not too sweet to suit with my liking.. the sweetness from semi sweet choc chic is good enough to sweeten the batter.. those with sweet tooth might not like it, though.. since today im in a good mood, i feel like it to share the recipe.. :)
INGREDIENTS
250g plain flour |
2 teaspoons baking powder |
Half-teaspoon bicarbonate soda |
2 tablespoons best quality cocoa |
175g caster sugar |
150g chocolate chips (plus more for sprinkling later) |
250ml milk |
90ml vegetable oil |
1 large egg |
1 teaspoon real vanilla extract |
METHOD
1. | Preheat the oven to 200C and fill a 12-bun muffin tray with paper cases. |
2. | Weigh out the dry ingredients into a large bowl. Pour all the liquid ingredients into a measuring jug. |
3. | Mix both together – it will be a runny batter - then spoon into waiting muffin cases. |
4. | Sprinkle more chocolate chips on top then cook for 20 minutes or until the muffins are risen and springy. |
